Gluten-Free Flourless Oatmeal Chocolate Chip Cookies

Oatmeal chocolate chip cookies don't need flour to be delicious. Rather than including a flour substitute to make these treats gluten-free, this recipe simply omits it altogether. The results are chewier, nuttier, and maybe even healthier cookies.

Note: if you have celiac disease or non-celiac gluten sensitivity, buy oatmeal that is specifically labeled "gluten-free". Oatmeal is naturally gluten-free but may be cross-contaminated by gluten-containing grains like wheat, rye, barley, and spelt during farming, transportation, and storage. Oatmeal that has been certified gluten-free does not have any cross-contamination.

Flourless Oatmeal Chocolate Chip Cookies Recipe


1/2 cup unsalted butter, softened

1 cup creamy peanut butter

1/2 cup sugar

1/2 cup brown sugar

2 large eggs

1 tsp. vanilla

3 cups old fashioned (rolled) oats

1 tsp. baking soda

1/4 tsp. salt

1 1/2 cups chocolate chips


Beat the butter, peanut butter, and sugars together until smooth. Add the eggs and vanilla and beat until well combined. Add the oats, baking soda, and salt and mix until just combined. Stir in the chocolate chips.

Cover and refrigerate cookie dough for at least 1 hour and as much as overnight.

Preheat the oven to 350F. Line a baking sheet with parchment paper. Drop rounded tablespoons of dough onto the baking sheet.

Bake cookies for 12 minutes. Let cookies cool for 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.
