What is gluten?

Gluten is a protein found in cereal grains such as wheat, rye, barley. It is the gluey part of many doughs and breads that allows a food to hold together. It generally makes things chewy. Gluten is in lots of baked goods, but it also hides in things like icings, caramels, licorice--even soy sauce! In recent years, awareness about gluten intolerance and celiac disease have made gluten-free foods more available. Celiac disease affects roughly 1% of the population. While grains provide plenty of benefits for people without gluten intolerance, your everyday cookie or sandwich is not pleasant to everyone. People with celiac disease suffer inflammation in their small intestine that can cause pain, bloating and stop some of the essential nutrients in food from being absorbed.

What is gluten-free?

It can be tricky, but there are a lot of things that remind people of cereal products, but are gluten-free. Oats, for example, naturally do not have gluten. However, it is often processed in places that process other cereal grains, so make sure it's labelled "gluten-free". Corn-, potato- and rice- based substitutes and nut flours are often used to make gluten-free baked goods.

Peanut butter oatmeal gluten free cookies recipe

Preheat oven to 350F

Line a cookie sheet with parchment paper


Using an electric mixer, beat the following ingredients together until smooth:

  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 cup peanut butter or almond butter
  • 1/2 cup granulated sugar
  • 1/2 cup dark brown sugar

Mix in the following ingredients thoroughly:

  • 2 large eggs
  • 1-1/2 teaspoons vanilla extract
  • Optional: add 1 teaspoon banana flavoring or rum extract

Reducing speed to low, add in:

  • 3 cups gluten-free oats
  • 1-1/2 teaspoons baking soda

Finally, stir in any 1 combination of the following yummy add-ins:

  • 1-1/2 cups chopped nuts, gluten-free dark chocolate chips, dried cherries

Bake for 10-12 minutes a batch, allowing 5 minutes to cool and set before removing them from the baking sheet.
